The beans for our Humure Espresso are produced by smallholder farmers from the village Rwamusaro in the highland region of Gatsibo. The coffee is grown on lush hillsides at altitudes above 1500m. The arabica variety is Red Bourbon and has been awarded a cupping score of 83. Baobabs Humure Espresso is a medium roast with distinct floral and light berry notes.
The farmers bring their freshly harvested coffee to the Humure Coffee Washing Station, where the coffee cherries are cleaned and documented to ensure traceability. The cherries are then sorted and prepared for further processing. After an 8 hour dry fermentation the cherries are pulped with a McKinnon depulper to remove the outer skin. The parchment is then transferred to fermentation tanks for10 hours, followed by washing, cleaning, and grading to maintain quality standards. A distinct 30-day protocol is followed during the drying stage, with raised beds to enhance air flow. On particularly sunny days, temporary shading is applied for about three hours to protect the coffee and ensure controlled moisture reduction throughout the drying process. During this period, the parchment is regularly turned and care fully hand-sorted to prevent defects and preserve quality.
The Humure Abishyizehamwe farmers have been trained to improve coffee cultivation practices and also about the importance of planting trees that provide shade for the coffee plants. Most farmers intercrop fruit trees such as papaya and banana, as well as shade trees, bringing partial shade to the coffee plantations and at the same time generate additional income.
